One the bonuses of dropping into Ristretto Roasters is that Din and Nancy always have fresh, homemade baked goods on hand. As one who must have indulged in dozens of Nancy's chocolate chip cookies at this point, I can't tell you what a boon this is for Portland. They are, no doubt, the best chocolate chip cookies in the world. No lie.
If you want to try your hand at making Nancy's cookies yourself, go right ahead - she's sharing the recipe with Ristretto Roasters fans and anyone else who happens to stop by here. Read the whole thing, after the jump.
The World's Best Chocolate Chip Cookies:
Preheat oven to 350 F
1 cup salted butter, soft but not too
1 cup dark brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons pure vanilla extract
2 cups plus 1 Tb. flour
1 t. baking soda
1 scant t. salt
2 cups semisweet chocolate chips
2 cups walnut halves, given one chop, or not
In a mixer, combine butter and sugars until just mixed. Add eggs and vanilla, and mix until just mixed. Add flour, soda and salt; again, until just mixed (no one wants a fluffy cookie!). Add chips, mix, and mix in walnuts by hand (the mixer will crush them to wee bits and you don't want that).
Place in globs about the size of an egg on a heavy baking sheet; if yours are flimsy, double the sheets. Bake about 8 minutes, turn the pan, then bake about 3 minutes more. You don't want the cookies all wet on top, but you don't want them all browned, either. Take from oven, and transfer cookies immediately onto wax paper. These are best eaten the day [of baking].
I am a big fan of Nancy's culinary skills, particularly baking, as for quite a few years she supplied the friday treats at my son's school in Hollywood. After perusing the ristretto website for the first time, I anguished over the fact that I am down here in Los Angeles and thus unable to rush right over for one of those tantalizing chocolate chip cookies and a cup of hand roasted coffee. Maybe you do fedex drop?

This is for Nancy. Is there any way I can get your wonderful recipe for your blueberry bran muffins? I know it was in a national magazine but it would be so much easier if I could just get it from you.

Is it okay to use milk chocolate for chocolate mousse than dark chocolate?
i think it tastes too bitter otherwise. coz i dont like the taste of dark chocolate.
